Around the 12th century, in the Emilia region, Cistercian and Benedictine priests began processing milk in large cauldrons to obtain a hard cheese. With only 30% water, Parmigiano Reggiano is a cheese rich in proteins, vitamins and minerals. Parmesan, which is not produced outside of Italy, is therefore an expensive cheese unique to that region. It contains concentrated nutrients of more than 4 liters of milk per kilo. It is an excellent source of protein, calcium, phosphorus, vitamins A, B2, B6, B12, E, D and K, pantothenic acid, biotin, magnesium, zinc, copper, potassium, sodium and cobalt. This cheese contains 18 of the body's 21 essential amino acids. It is fat and cholesterol free compared to many other cheeses.
