There are many sites claiming the origin of Gnocchi. Although often associated with Northern Italy, there are different varieties made with a variety of basic ingredients depending on the region where it is made: Flour, cornmeal, semolina, bread, chestnut flour, ricotta, or vegetables - from pumpkin to spinach and classic potatoes. The word Gnocchi is thought to originate from the Nocca word meaning knuckle or the Lombard word meaning knot or walnut. The most famous and beloved Potato Gnocchi, worldwide known and loved, dates back to the 16th or 17th century long after Spanish explorers brought potatoes from South America and introduced them to Italian cuisines.
Every region in Italy, especially in the north, has its own gnocchi pasta varieties and its own distinctive sauce or serving style. Gnocchi Sardi is native to Sardinia, also known as Malloreddus Gnocchi. Malloreddu comes from the Latin mallolus and means bite or small pieces. However, this pasta is also called Sardinian Gnocchi as it really resembles small potato gnocchi because of its shape. It is made from wheat semolina flour, water and salt.
